Our vinegars with incredible complexity, a mix of aged depth and bright acidity are: The Sherry vinegar is a gourmet wine vinegar made from Sherry and aged in Bodegas y bebidas Sur de España (located in Jerez de la Frontera, Cadiz). The wine spends a minimum of six months aging and fermenting into Sherry Vinegar in oak barrels. It’s this aging process which allows to provide us with an exceptional quality product. Some Sherry vinegars (Reserve Sherry Vinegar, Gran Reserve Sherry Vinegar) are 10 or 20 years old. Moreover, this long aging explains the great complexity of flavors and above all , the high concentration that characterizes these vinegars and that becomes in a real pleasure for the senses.
